Lewisham - CEL in bloom


Students on this course learned how to make wired sugar orchids including colouring the flowers with dusting powder (as made by the learner above), covering cakes in sugar paste and decorating the cake using their own colour schemes.  

As well as making drapes and ribbons, the learners also learned about creating  leaves and vines.












Orchids & Roses - CALAT Smitham



Learners at CALAT (Croydon Adult Learners and Training) College had a choice of making roses or Cattleya Orchids, one student made a Cymbidium orchid also. Students were shown how to make wired flowers and colour them with dusting powder.  The more experienced learners made tiered decorative cakes, whilst the new students made and decorated single tier cakes.












Royal Icing and Piping - SCOLA Wallington Style!

My second class of Royal Icing and piping located at SCOLA Wallington also made runouts and worked extensively with royal icing.











Flowers, curtains and cakes (Oh my...)


At CALAT South Norwood Centre students learnt how to cover their cakes in fondant, creating bows, swags and roses.  They worked with a variety of mediums including Sugarpaste, 50/50 (pastillage) and flower paste.  They also learned how to decoratively crimp their cakes as well as pipe lettering and here are some of the results below.

Icing on the Cup Cake Course - SCOLA




On 19th February some learners enrolled on the "Icing on the cupcake" course run by SCOLA.  The aim of the course was to have fun with cupcakes, getting away from doing the traditional cupcake swirls, instead making some flowers and character cupcakes.  The learners used plungers, textured rolling pins,colours and fondant to create their masterpieces and we had a laugh or two along the way...













SCOLA - SUTTON Royal Icing and Piping Course

Working with royal icing requires practice and patience as my learners soon found out, none of the students had worked so intensively with royal icing before.  Our project was to coat a cake in royal icing and produce a run out design, decorate using border piping scroll techniques, and pipe letters freehand, all the learners rose to the challenge with pretty impressive results.
